SPICY CHICKEN SAUTE 
1/3 c. ketchup
1/4 c. apple juice
1 1/2 tsp. curry powder
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. thyme
1 green pepper, cut in strips
1 red pepper, cut in strips
1 med. onion, cut in eighths
1 clove garlic, minced
2 tbsp. oil
1 lb. boneless chicken breasts, cut in 2" strips
1/3 c. raisins
1/4 c. peanuts (shelled)

In skillet, brown chicken in 2 tablespoons oil. In separate bowl, combine ketchup, apple juice, curry powder, salt, pepper and thyme. Mix well; set aside. Add peppers, onion and garlic to skillet. Saute 5 minutes. Add ketchup mixture and simmer 10 to 15 minutes. Add raisins and peanuts and cook 2 minutes longer. Serve over cooked rice.
