GRANDMA'S YEAST ROLLS
3/4 c. sugar
1/4 c. butter
1/2 c. mashed potatoes
1 c. milk or 1/2 c. water and 1/2 c. milk
4 c. flour or more
2 eggs
1 cake yeast or 2 pkg.
Pinch of salt

Cream butter and sugar. Add eggs and salt. Mix well. Dissolve yeast in 1/4 cup warm water, not hot water and 1/2 teaspoon sugar. (Let yeast mixture stand a few minutes.) Will foam up. Add mashed potatoes, flour and milk. Mix well. Beat with electric mixer until thick, then mix by hand. Dough should be sticky.

Put in greased bowl. Let rise until double in size (in warm place) or put in refrigerator overnight. Let rise after taking from refrigerator.

For rolls, make dough oblong. Put melted butter on top; not too much. Sprinkle sugar and brown sugar on top of butter. Add cinnamon and chopped nuts. Roll up, then cut 1 inch thick pieces. Arrange in 9-inch greased cake pans. Let rise. Bake at 350 degrees for 15 or 20 minutes.

After rolls are baked, spread with thin layer of powdered sugar icing.
