CHARLOTTE'S BROCCOLI CORNBREAD 
1 box Jiffy cornbread mix
2 c. shredded Cheddar cheese
1/2 c. milk
1 tsp. salt
2 eggs
1 large onion, chopped
1 stick butter
1 tbsp. sugar
1 (10 oz.) frozen chopped broccoli, thawed (not cooked)

Mix cornbread mix, sugar and salt. Beat eggs and add milk. Combine milk/egg mixture with cornbread mix. Mix well. Add cheese, onion and broccoli. Melt butter. Pour about 2/3 of butter in mixture and pour the rest in a pan (I use Corning Ware small square dish 8 x 8). Put mixture in pan and bake at 325°F for 45 minutes until done.
