SPLIT PEA SOUP 
2 c. dried split peas
3 qts. cold water
1 sm. shank end of ham
1 med. carrot, chopped
3 stalks celery, diced fine
1 lg. onion
Fresh parsley, chopped
Salt & pepper

Combine all the ingredients in a large pot and heat to boiling. Lower heat and cover and simmer for 3 hours. Serve hot. Serves 8 to 10.
