CRUSTY HERBED CHICKEN 
2 tbsp. butter
1/2 c. buttermilk baking mix
1/4 tsp. thyme
1/4 tsp. rosemary
1 tsp. salt
1/8 tsp. pepper
1 1/2 lb. chicken pieces

Heat oven to 425 degrees. Melt butter in baking pan. Mix 1/2 cup baking mix, spices together in a plastic bag. Wash and skin chicken pieces. Coat chicken pieces one at a time by placing in bag and shaking. Place chicken in baking pan. Bake uncovered 30 minutes. Turn chicken and continue baking until chicken is tender, 20-25 minutes.
