P.R. RUM BANANAS 
1. Green Spanish bananas or 6 regular (under ripe)
2. 1 c. rum
3. 1 c. brown sugar
4. 1/2 c. coconut
5. Ice cream and or pound cake

Mix 2 and 3 together to form syrup; cover bananas with it. Soak for about 1 hour. You can bake in oven at 300 degrees for 40 minutes or until soft; sprinkle with coconut and serve with ice cream and cake. My favorite way though to do this is, soak 1 hour; put in flame-proof bowl, light, let flame burn out or if you get nervous, cover with lid. Put coconut on it and serve with #5.

A small salad of chunked veggies (marinated with 1/4 cup olive oil), wine vinegar, cilantro, and Cajun spices solves the balance of the meal.
