SCOTTISH MEAT LOAF 
1-2 lbs. chopped meat
1 grated onion
3/4 to 1 c. flavored bread crumbs
1 egg, beaten
Salt and pepper (pinch)
1 1/2 tbsp. poultry seasoning
2 hard boiled eggs

In large bowl mix meat, bread crumbs, beaten egg, salt, pepper, and poultry seasoning. Flatten meat on sides of bowl. In center put 2 hard-boiled eggs. Fold meat over eggs and shape like a football. Wrap in cheese cloth and tie ends tightly.

Put in large pot of boiling water. Boil for about 3 1/2 hours. Add water as needed. Serve warm or cold with vegetable and potatoes.
