GREAT AUNT EDNA'S CHINESE BEEF 
2 lbs. flank, round sirloin
2 tbsp. oil
1 clove minced garlic
1 tsp. salt
Dash of pepper
1/4 tsp. ginger
1/4 c. soy sauce
1/2 tsp. sugar
2 tomatoes, quartered
2 green peppers, cut into 1 inch sq.
1 drained can bean sprouts
1 tbsp. cornstarch
1/4 c. water

Cut steak into thin strips across grain of meat. Combine steak, garlic, salt, pepper and ginger. Brown in oil - 275 degrees. Add soy sauce, sugar and reduce to low heat. Cover and simmer 5 minutes. Have ready cornstarch/water. Add tomatoes, peppers and drained bean sprouts. Simmer covered about 5 minutes longer. Do not overcook! Add cornstarch mixture and stir occasionally until mixture thickens slightly. Serve over rice. Serves: 6.
