RICH CHOCOLATE CAKE 
2 c. sugar
1/2 c. cocoa
1 c. hot coffee
1 c. buttermilk
1 tsp. salt
1 tsp. baking soda
1 c. Wesson oil
2 eggs
1 tsp. vanilla
2 c. flour

Dissolve the 1 teaspoon of baking soda in the cup of buttermilk. Use a bowl that will hold more than 1 cup as the soda and buttermilk will foam up. Set aside. Add rest of ingredients in order in large mixing bowl, then add buttermilk mixture. Beat until thoroughly mixed. Pour into oblong baking pan and bake at 350 degrees for 40 minutes or until toothpick inserted into middle of cake comes out clean. Remove from oven and prick all over with a fork. While cake is hot pour icing on top.
