PORK OR CHICKEN SCALOPPINE IN
LEMON SAUCE
 
Pork or chicken
1/2 c. all purpose flour
Salt & pepper
1/4 c. butter
1 tbsp. olive oil
Juice of 2 lemons
3 tbsp. chopped parsley
2 garlic cloves, chopped

Pound meat thin. Coat with flour and salt and pepper. Melt 3 tablespoons butter with oil in skillet. When butter foams add meat. Cook on medium high until browned, about 5 minutes. Remove meat. Add butter and lemon juice. Deglaze skillet; stir in parsley and garlic. Return meat; serve at once.
