CELERY OF THE ISLANDS 
4 c. celery, sliced
2 tbsp. butter
2 tbsp. soy sauce
1/2 tsp. sugar
1/4 tsp. fresh ground pepper

Use only heavy outside stalks of celery without foliage. Slice diagonally into 1 inch widths. Saute celery in skillet in very hot butter until slightly browned but still crisp when tested with a fork (4 to 8 minutes). Add remaining ingredients and stir 2 minutes longer. Serve hot.
