CHEESE STICKS | |
1/2 lb. flour sifted with 1/2 tsp. baking powder 1/2 lb. or 2 sticks butter Mix butter with flour as for pie crust. 1/2 lb. cheese (grated), 1/4 c. Swiss and 1/4 c. Cheddar Add to butter and flour mixture plus 1 teaspoon salt and 3 egg yolks. Mix all together until smooth. Divide into two balls. Dust with flour and roll in saran wrap and refrigerate overnight. Roll on floured board 1/2 inch thick. Cut in strips. Six inches long and 1/2 inch wide. Place on slightly greased cookie sheet about 1 inch apart. Brush with: 1 egg yolk and 1/2 the white. Beat up with salt and brush over sticks. Sprinkle with caraway seed generously. Bake at 400 degrees for 10 to 12 minutes. Watch closely for even color. Easily burned. Lift with spatula gently when slightly cool. No refrigeration needed. This is an old Hungarian family recipe. |
