LEMON GELATIN 
1 1/2 tbsp. granulated gelatin
1/4 c. cold water
1 1/2 c. boiling water
Very sm. pinch of salt
3/4 c. sugar
1/8 c. lemon juice or lime

Soak gelatin in the cold water to soften, about four minutes. Add the boiling water and sugar; dissolve well. Add the lemon or lime juice. Strain through a very fine strainer. Pour into wet mold and cool until firm.
