APRICOT GEMS 
2/3 c. dried apricots
1/2 c. soft butter
1/4 c. white sugar
1 1/3 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
1 c. brown sugar
2 eggs, well beaten
1/2 tsp. vanilla
1/2 c. nuts
Confectioners' sugar

Rinse apricots; cover with water. Boil for 10 minutes; cool and chop. Grease 8 inch pan. Mix butter, white sugar and 1 cup flour until crumbly; pack into pan. Bake at 375 degrees for 25 minutes or until light brown. Sift together remaining flour, baking powder and salt.

Gradually beat brown sugar into eggs; and flour mixture. Mix in vanilla, nuts and apricots. Spread over baked layer. Bake 30 minutes or until done; cool in pan. Cut into bars; roll in confectioners' sugar (or sprinkle on top).
