ASPARAGUS RICE | |
1 stick butter, unsalted 1 med. onion, chopped 1 clove garlic, chopped 1 c. long grain rice (raw) 1 3/4 c. chicken broth or 1 (14 oz.) can 1 lb. fresh asparagus, trimmed, peeled & cut in 1 inch pieces 2 tbsp. fresh parsley, chopped IN 3 quart round casserole, add butter, onion, garlic. Cover and microwave on High 3 minutes or until onion is tender. Stir in raw rice coating every grain. Stir in broth. Cover and microwave 6 minutes on High. Then microwave on medium for 5 minutes. Stir in the asparagus and microwave on medium five minutes or until most of liquid is gone. Then stir in parsley, cover and let stand five minutes. |
