OLD FASHIONED SUGAR COOKIES | |
2 c. sugar 1 c. shortening 2 eggs 1 c. milk 1-2 tsp. vanilla 2 tsp. baking soda 2 tsp. cream of tartar 2 tsp. baking powder 1 tsp. salt 6 1/2 c. flour Mix in usual way. Chill 2 hours and roll. Bake 8-10 minutes at 350 degrees. RAISIN FILLING: 2 c. raisins Water to cover well 2 1/2 tbsp. cornstarch 1 tsp. lemon juice or extract Vanilla, if desired 1 c. sugar Cook together all but lemon and vanilla; add these after other mixture is cooked. FILLED COOKIES: Roll out a bit thinner possibly than for plain single sugar cookies. After arranging on cookie sheet place a measure of raisin filling in the center of each. Top with matching cookie and seal edges around with a fork. Then prick several times on top cookies. Bake 12-15 minutes at 350 degrees. |
