FRESH TOMATO - ZUCCHINI SAUCE 
1/2 c. butter

2 c. chopped onions
1 clove garlic, sliced
2 c. sliced celery
2 c. chopped green pepper

Cook until tender.

4 c. med. zucchini in 1/2 inch cubes

Cook 5 minutes.

12 med. tomatoes, peeled and chopped
2 tsp. flavor enhancer
2 tsp. salt
1 tsp. sugar
1/2 tsp. pepper
2 tsp. dried leaf thyme
1 bay leaf

Simmer, covered, for 45 minutes. Remove bay leaf; cool. Ladle into freezer containers. Makes 3 quarts. Serve like a sauce over meat, chicken, rice, etc.
