PECAN CUPCAKES 
1 c. sugar
1 c. pecans, ground fine
1 c. graham cracker crumbs
5 egg whites, beaten stiff
1 tsp. vanilla

Combine 1 cup sugar, 1 cup pecans, 1 cup graham cracker crumbs and mix. Beat egg whites stiff. Add to previous mixture. Stir until well mixed. Add vanilla. Stir. Fill greased cupcake pan. Bake at 350 degrees for 20 to 30 minutes. Will burn easily, so when cupcakes begin to crack on top, remove from oven. Remove from pan while hot. These will freeze for later use.
