ORIENTAL CHICKEN CASSEROLE 
3/4 c. mayonnaise
2 tbsp. lemon juice
2 tbsp. soy sauce
2 tbsp. butter
1 lg. onion, diced
1 1/2 c. thinly sliced celery
1/3-1/2 lb. mushrooms, sliced
3 c. diced cooked chicken
1 (8 oz.) can water chestnuts, sliced
1 (3 oz.) can French fried onion rings
3/4 c. slivered almonds

Preheat oven to 350 degrees. Combine first 3 ingredients. Saute onion, celery, mushrooms in butter. Mix chicken, water chestnuts, almonds. Stir in mayonnaise mixture. Bake, uncovered 30 minutes. Top with French fried onion rings and bake another 5 to 10 minutes. NOTE: Bake in glass baking dish.
