OATMEAL PANCAKES 
2 c. milk
1 1/2 c. quick rolled oats (uncooked)
1 c. sifted flour
2 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
2 eggs, beaten
1/3 c. melted butter

Pour milk over oats and let stand 5 minutes. Sift together flour, baking powder, salt and sugar.

Add beaten eggs to rolled oats mixture; add butter; add sifted dry ingredients. Mix quickly and lightly. If not used right away, store in refrigerator and mix again just before using. Keeps several days in refrigerator.
