SODA CRACKER CAKE 
3 egg whites
1 c. sugar
1/2 tsp. cream of tartar
1 c. soda crackers, coarsely crumbled
1/2 c. pecans or walnuts, chopped
1/2 tsp. vanilla extract
1/2 tsp. almond extract
1 can or jar cherry pie filling
1 lg. container Cool Whip

Beat egg whites, gradually adding sugar after whites have begun to stiffen; set aside. In separate bowl mix soda crackers, nuts, vanilla extract, and almond extract together. Fold egg whites into cracker mixture.

Spread into 9x13-inch baking dish. Bake crust for 30 minutes in 350 degree oven; let cool. Spread pie filling over crust and top with Cool Whip.
