ALMOND COOKIES 
1 c. butter
1 c. sugar
2 tbsp. maple syrup
3/4 c. finely chopped almonds
2 c. white flour
1 tsp. baking soda
Dash salt

Cream the butter and sugar together until light, then add the maple syrup and nuts. Stir in the flour, soda, and salt until well blended. Chill slight if the dough is too soft to work with. Shape into 2 rolls, each about 1 1/4 inches in diameter. Refrigerate and bake at your convenience.

Just before baking, cut 1/2 inch thick slices, place 1 inch apart on a greased baking sheet, and bake at 350 degrees for 10 minutes or until very lightly golden. Makes 3 to 4 dozen cookies.
