APPLE RAISIN NUT BREAD 
For 1 loaf you will need:

2 eggs
1/2 c. vegetable oil
1 1/2 c. all-purpose flour
3/4 c. sugar
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. salt
1/2 tsp. baking powder
1 c. chopped walnuts
1 c. raisins
1 c. shredded fresh apples (2 med. apples)

TIPS: Raisins may be replaced by the same amount of chopped dates, or omitted entirely. Quick breads should be mixed until well blended, but not overmixed in order to prevent the formation of "tunnels" in the baked loaf.
