OATMEAL CAKE 
1 1/4 c. boiling water
1 c. quick cooking oats
1 stick butter
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla and/or maple

Pour water over oats, set a few minutes. Add butter, eggs, sugars and vanilla. Stir together. Sift dry ingredients and stir in. Pour into 9x13 cake pan. Bake at 350 degrees for 30-35 minutes.

ICING:

1/2 c. evaporated milk
1 c. coconut
1 c. brown sugar
1 c. chopped walnuts or pecans

Mix and pour over hot cake, return to oven for 5 minutes.
