WALDORF SALAD 
1 sm. to med. apple (per person)
1/2 rib celery (per apple)
1 tbsp. raisins (per apple)
3 to 4 Maraschino cherries (per apple), halved (reserve syrup)
5 to 6 seedless grapes (red or green) (optional)
1 to 2 tsp. walnuts or pecans, coarsely chopped (per apple)
Salt
Sugar
Milk
Mayonnaise

Use good, firm sweet/tart apples, such as Golden Delicious or Granny Smith. Peel, slice into sections, and slice crosswise into bite-size pieces. If using red apples, 1 or 2 may be left unpeeled for color. Slice celery finely. "Plump" raisins in hot water or orange juice. Drain before adding raisins to salad. Add cherries and grapes. Salt lightly. Sugar lightly (about 1/2 teaspoon per apple). Add large spoonfuls of mayonnaise, thinning slightly with cherry syrup and/or milk until mixture is evenly coated. Let rest in refrigerator about an hour before serving. Add nuts just before serving.
