BANANA NUT BREAD | |
1/2 c. butter 1 c. sugar 2 beaten eggs 1 tsp. vanilla 2 c. cake flour, measured after sifting 1/2 tsp. salt 1/2 tsp. baking soda 1/4 c. milk 3 sm. or 2 lg. bananas, mashed to pulp 1 c. chopped pecans Cream butter and sugar. Add eggs and vanilla. Beat until fluffy. Add sifted dry ingredients alternately with milk, bananas and nuts. Beat well after each addition. Bake in Pam-sprayed loaf pans in a 350 degree oven for 50 minutes or until brown and inserted toothpick comes out clean. This bread keeps well in plastic wrap and also freezes well. |
