BANANA - NUT BREAD | |
1/2 c. shortening 1 c. sugar 2 c. sifted flour 1/2 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 2 eggs 3 lg. or 5 sm. very ripe bananas, mashed pulp 1/2 c. chopped pecans Cream shortening and sugar well. Add 1 tablespoon flour. Beat in the eggs, 1 at a time. Add remaining flour and banana pulp, reserving 1/2 cup flour. With this, sift the salt, soda and baking powder. Add, along with the nuts. Pour batter into well-greased bread loaf pan, pulling dough to ends and sides of pan to make a well-shaped loaf. Bake for 1 hour in 350 degree oven. |
