BANANA BREAD 
1 loaf pan, 5x9 inch
3/4 c. sugar
1/2 c. butter flavor shortening
2 eggs
4 med. or 1 c. bananas (mashed)
1 3/4 c. unsifted flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Nut if desired (I use pecans crushed)
Pam spray

In large bowl beat eggs, add sugar, shortening until fluffy. Add mashed bananas; mix well into egg mixture then set aside.

In smaller bowl mix flour, baking powder, baking soda and salt. Add dry ingredients to egg mixture 1/3 at a time mixing well. Batter will be lumpy.

Bake in loaf pan sprayed with Pam 50-60 minutes. Top of bread will split. Cool 10 minutes then remove from pan and finish cooling on rack. Serving per loaf: 18 1/2 inch slices. Calories: 145 per slice.
