Line bottom of pan with pared fruit of your choice that has been cut into bite-size pieces (about 6 cups). Make a batter of: 2 sticks (1 cup) butter, softened, 1 cup sugar, 1 cup milk, 2 cups flour, 2 tsp. baking powder, and 1/2 tsp. salt. Pour batter over fruit. In another bowl (i.e. measuring cup) mix 1-1/3 cup sugar and 3/4 cup water. Heat/microwave just until sugar has dissolved. Pour sugar/water mixture over batter. Bake at 350°FF for 1 hour. Note: If you cover the left-overs, it will still be delicious but the crust will lose it's crispiness. |
