MENUDO 
1 lb. lean pork, cut into cubes
1/4 lb. pork liver, cut into cubes
2 tbsp. cooking oil
2 cloves garlic, smashed
1 sm. onion, sliced
1 sm. fresh tomato, wedges
1 med. carrot, cut into cubes
1 c. cooked garbanzos (chick peas) skins removed
1 med. potato, cut into cubes
2 bell peppers, red and green, cut into cubes
1 can (8 oz.) tomato sauce diluted in 2 c. of water
1 tsp. salt
Dash of ground black pepper

Saute garlic in oil until golden brown. Add onion and stir. Add tomato and continue to cook. Stir in carrot, meat, chick peas, and potato. Stir and add bell pepper. Add tomato sauce and simmer until cooked. Season with salt and pepper. Serve hot with rice.
