SUPPER FOR TWO 
This hearty meal-in-one is perfect on a shivery night. Even the "dish" is delicious.

2 sm. round loaves of chews, dense bread, such as sourdough
1 tbsp. butter
1 sm. yellow onion, chopped
1 (10 oz.) pkg. frozen corn
1 med. potato, peeled, cubed, and parboiled until tender
1/2 sm. green bell pepper, chopped
Pinch of hot pepper flakes
1/2 c. Half and Half
1 c. chicken broth
1/4 tsp. salt
1/8 tsp. freshly ground pepper
2 sprigs fresh parsley, chopped

Using a serrated knife, cut tops off loaves and reserve. Hollow out bread, leaving 3/4 inch border. Set aside. Melt butter in a medium saucepan, and saute onion until tender but not brown.

Stir in corn, potato, bell pepper, pepper flakes, Half and Half, chicken broth, salt and pepper. Simmer 15 minutes. Ladle soup into bread "bowls" and garnish with parsley. Serve immediately with bread tops on side.
