PECAN ORANGE CHICKEN | |
6 chicken breasts 6 oz. can orange juice 3 tbsp. oil 1 tsp. parsley seasoning 1 tsp. salt 3 tbsp. cornstarch (mix with 3 tbsp. water) 1/4 c. green onions, chopped 1/2 c. pecan pieces (sm. pkg.) Put oil in skillet. Brown chicken (medium heat). Add orange juice, 1/2 cup water, salt and poultry seasoning. Turn to simmer and cover. Simmer for 30 to 35 minutes, basting chicken every 5 minutes. Then remove chicken and cover. Add to sauce in skillet the mixture of cornstarch and water, add a little at a time over low heat. This will thicken quickly. Then add onions and pecans. Pour over chicken. (Chicken is more tender with ribs). |
