CHINESE CHICKEN 
1 chicken
3-4 c. chicken broth
1 1/2 c. chopped onion
1/2 - 1 1/2 c. celery
1 (8 oz.) can mushrooms & juice
6 tbsp. soy sauce
7 tbsp. cornstarch
Chinese noodles or cooked rice

Boil chicken in salted water for 1 1/2 to 2 hours. Save broth. Remove chicken from bone, skin and cut into bite size pieces. Set aside.

In large skillet melt butter and saute onions, celery and mushrooms. Add chicken. In large pan mix soy sauce, cornstarch and broth. Add chicken mixture to broth and mix well. Simmer on medium for 15 or 20 minutes. Serve over Chinese noodles or rice.
