APPLE QUICK BREAD | |
1 1/2 c. peeled, shredded apples 1/2 c. shredded carrot 1/2 tsp. lemon extract 1 3/4 c. flour 1 tsp. baking powder 1/2 c. coconut or chopped nuts 2 eggs 2/3 c. sugar 1/4 c. butter 1/2 tsp. salt 1 tsp. baking soda Heat oven to 350 degrees. Grease only the bottom of a loaf pan. Blend apples, carrots, butter, lemon and eggs. Add remaining ingredients, except coconut or nuts. Beat 3 minutes at medium speed. Stir in coconut or chopped nuts. Pour batter into pan. Bake 50-60 minutes or until a toothpick inserted into the middle comes out clean. Remove from pan to cool. Refrigerate any leftovers. Makes 1 loaf. |
