ZUCCHINI SAUTE 
2-3 (1 lb.) zucchini
1 tbsp. vegetable oil
1/2 c. thinly sliced onion
1/2 tsp. salt
1/2 tsp. oregano or basil
Dash of black pepper

Clean and slice into thin strips or bite-sized pieces. Heat oil in a large frying pan. Add onions and stir-fry quickly until onions are translucent, not browned. Add zucchini, cover pan, and cook 3-4 minutes, until zucchini is wilted. Sprinkle with all seasonings and mix well.
