LENTIL AND TURKEY CASSEROLE | |
1 c. dry lentils 3/4 c. ground turkey 1 c. sliced carrots 1 c. broccoli 1/2 c. fresh string beans 1/2 c. sliced onions 1 (8 oz.) can stewed tomatoes 4 oz. shredded Mozzarella cheese 1/2 tsp. dried oregano 1 med. tomato, sliced 1/2 tsp. salt 1/2 tsp. pepper In large saucepan, cook lentils in 2 cups of water for 35 minutes or until tender. Drain; set aside. Brown ground turkey in pan, blot off remaining fat. Cook vegetables until tender crisp. Combine lentils, turkey, vegetables, undrained stewed tomatoes, half of the cheese, oregano, salt and pepper. Mix well, spread into baking dish. Cover and bake at 350 degrees for 30 minutes. Top with sliced tomatoes and remaining cheese. |
