TOMATO MUSTARD SAUCE 
1 c. mayonnaise
1 lg. tomato, seeded and chopped
1/4 c. Dijon mustard
3 tbsp. capers

Combine all ingredients in bowl. (Can be made one day ahead; cover and chill). Serve this sauce with cold poached chicken or blanched vegetables. Yield: 1 1/2 cups.
