HAM AND CHEESE SOUP 
1/2 c. finely diced fresh carrots
1/2 c. finely diced fresh onion
1/2 c. finely diced fresh celery
1/2 c. finely diced green pepper
1/4 c. melted butter
6 tbsp. butter
6 tbsp. flour
3 c. milk
1 c. light cream
1 tsp. salt
2 c. grated sharp Cheddar cheese
1 c. grated Gouda cheese
1/2 c. finely diced, cooked ham
1 tsp. Worcestershire sauce
Freshly ground black pepper
Crisp cooked, crumbled bacon

Saute carrots, onion, celery and green pepper in 1/4 cup butter until tender. Set aside. Melt 6 tablespoons butter; stir in flour and gradually add milk, cream and salt. Stir over medium heat until thick and smooth. Add grated Cheddar cheese and Gouda cheese and stir until melted. Add vegetables, ham and Worcestershire sauce; add ground pepper. Serve very hot, garnished with a generous sprinkling of crisp, crumbled bacon.
