WILD RICE, HAM AND CHEESE SOUP 
2 tbsp. butter
1/4 c. minced onion
1/4 c. flour
4 c. chicken broth
2 c. cooked wild rice
1/2 tsp. salt
1 1/2 c. half and half
2 tbsp. sherry
1/2 c. grated carrots
1/2 c. chopped ham
1 c. grated Cheddar cheese
3 tbsp. slivered almonds
Chives for garnish

Melt butter in saucepan. Saute onion until tender. Blend in flour, gradually add broth. Cook, stirring constantly until mixture thickens slightly. Stir in rice and salt and simmer five minutes. Blend in half and half and sherry. Add carrots, ham, cheese and almonds. Heat to serving temperature. Garnish with chives. Four hearty servings.
