BAKED BEANS | |
Makes 10 to 12 servings. If you like canned baked beans, you'll love this homemade version of an old favorite. 3 c. (1 1/2 lbs.) dried white beans 2 ham hocks 1/2 c. molasses 2 tbsp. powdered mustard 1/2 c. ketchup 1/4 tsp. ground cloves 1/2 tsp. ground black pepper Water 2 tsp. salt or to taste Preheat oven to 275 degrees. Soak the beans in water for 3 hours to soften slightly, then drain and discard the water. Place beans in a heavy lidded casserole and add the molasses, mustard, ketchup, cloves and pepper and mix well. Add the ham hock; add enough water to cover the beans by 2 inches. Cover the casserole and place in the oven. After 2 hours, add the salt and more water. Replace in oven and continue to cook another 6 hours. Check the beans every hour or so and add more water if necessary. |
