HEARTY HAMBURGER CASSEROLE 
2 lb. hamburger
1 med. onion, chopped
4 med. potatoes, sliced
1 1/2 c. Minute Rice
2 tsp. butter
1 1/2 c. water
1/2 tsp. salt
2 cans (14 1/2 oz.) stewed tomatoes

Brown hamburger and onion together. Prepare the Minute Rice by bringing the water, salt and butter to a boil in a saucepan; add rice and stir with a fork. Remove from heat and cover for five minutes. Grease a two-quart baking dish.

Place a layer of sliced potatoes on the bottom, then a layer of hamburger mixture, and a layer of rice. Sprinkle with salt and pepper. Put another layer of potatoes, hamburger, and rice. Again sprinkle with salt and pepper. Pour the stewed tomatoes over the top. You should have about 1 inch of the tomato juice on the bottom. Cover and bake about 1 hour in 375 degree oven or until potatoes are done. Remove the cover for the last 10 minutes of baking.
