ORANGE MARMALADE | |
10 navel oranges (3 c. orange juice & lemon) 1 lemon 8 c. sugar 1 pkg. Sure Jel 1/8 tsp. baking soda 1/4 tsp. butter 2 c. water Wash and dry fruit; peel fruit with potato peeler and put in blender with juice. Add water and blend well. Put into LARGE pot and add 1/8 teaspoon baking soda. Simmer slowly with lid on, 15 minutes (while this is simmering juice fruit). Then add juice and immediately stir in Sure Jel and 1/4 teaspoon butter. Bring to a hard boil and boil one minute. Stir in sugar and bring to a hard boil for 2 minutes (no lid). Next test on ice covered saucer, remove from freezer. Should be syrup style that stops running as you twist saucer around. If not, boil hard another few minutes and test again. Remove from heat and put in jars. |
