HUSH PUPPIES 
2 1/3 c. yellow meal
2/3 c. flour
4 tbsp. sugar
3 tsp. salt
1 1/4 c. water
3/4 stick butter
1 bunch parsley, finely minced
1 bunch green onions, tops and bottoms, chopped fine
1 green hot pepper, finely minced

Sift together all dry ingredients. In a large container, bring water and butter to a boil. Add parsley, onions, and peppers and boil until onions are clear. Gradually add sifted ingredients, stirring constantly to prevent lumping. Cook over low heat approximately 5 minutes or until extremely thick. Remove from heat. Pour on large cookie sheet and allow to cool completely. Roll into shapes 1/2 x 3 inch and fry in deep fat until golden brown.
