SLICED CUCUMBERS | |
NO. 1: 1 gal. cucumbers 1/2 c. vinegar 1 1/2 tsp. alum Water 2 tbsp. cake color "red" 1 c. lime NO. 2: 2 c. vinegar 2 c. water 4 sticks cinnamon 7 c. sugar 1 c. red hots Peel, slice cucumbers 1/4 inch. Cut center out. Add to cucumbers, 1 cup lime and water to cover overnight. Drain and wash well. Cover with cold water and soak for 3 hours. Drain. Do not wash. Add cucumbers to 1/2 cup vinegar, 2 tablespoons cake coloring "red", 1 1/2 teaspoons alum and enough water to cover. Simmer 2 hours. Drain, do not wash. Heat 2 cups vinegar, 7 cups sugar, 2 cups water, 1 cup red hots and 4 sticks cinnamon until red hots dissolve. Pour over cucumbers and let set overnight. Heat to boiling and can. |
