1 English muffin 1 poached egg 1 recipe med. white sauce with fish added 1 tbsp. cheddar cheese, grated Salad shrimp for garnish Cocktail sauce for garnish Make medium white sauce and add fair amount of fish, trout, cod, halibut or what you have. Place 1/2 English muffin on plate. Slide poached egg onto muffin. Bury egg with fish sauce and sprinkle with cheese. Toast other muffin half and cut in half. Butter it and place on each side of plate. Pop in microwave to melt cheese (not too long or egg is too done and uncovered). Garnish with salad shrimp in cocktail sauce in real seashell. Use your imagination with this. First-time beach people enjoy this with ground mussels gathered from the rocks at low tide. |
