ZUCCHINI AU GRATIN | |
Butter 1 1/2 tbsp. butter 1 1/2 tbsp. all-purpose flour 3/4 c. milk 1 tbsp. fresh lemon juice 1/4 tsp. freshly grated nutmeg 1/8 tsp. hot pepper sauce 3 med. zucchini, grated 1 egg, beaten to blend Salt and freshly ground pepper 3 tbsp. fresh bread crumbs 3 tbsp. freshly grated Parmesan cheese Preheat oven to 425 degrees F. Lightly butter 8 inch glass pie pan. Melt 1 1/2 tbsp. butter in heavy medium skillet over medium heat. Add flour and stir 1 minute. Add milk and stir until thickened and smooth, 1 to 2 minutes. Mix in lemon juice, nutmeg and hot pepper sauce. Remove from heat. Stir in zucchini and egg. Season with salt and pepper. Transfer mixture to prepared pie pan. Combine bread crumbs and Parmesan. Sprinkle over zucchini. Bake until set and golden brown, about 35 minutes. Serve immediately. 6 to 8 servings. |
