AUNT LORINDA'S GREEN RICE 
1 c. chopped onions
1 c. chopped celery
1 c. chopped green peppers
2 tbsp. butter
16 oz. frozen veggies (carrots, chopped broccoli, cauliflower, etc.)
1 c. uncooked minute rice
16 oz. Cheese Whiz
2 cans cream of mushroom soup
Parmesan cheese
Sliced water chestnuts (optional)

Saute onions, peppers and celery in butter for 10 minutes. Add thawed frozen veggies and saute for 20 minutes. If you are using the water chestnuts, add when you add the veggies. Make rice according to package. Add cheese whiz and soup to cooked rice. Mix well. Add veggies to rice mixture. Mix well. Pour into a greased baking dish. Sprinkle Parmesan cheese on top. Bake at 350 degrees for 30 minutes or until top is golden brown.

Can be frozen, thawed and baked at 350 degrees for 50 to 55 minutes.
