CAPRICORN'S RED CLAM SAUCE 
1/2 c. oil
3 cloves garlic, chopped
3 (15 oz.) cans Hunt's Tomato Sauce
3 (6 1/2 oz.) cans Snow's chopped or minced clams, juice included
1 tsp. oregano
2 tbsp. Parmesan cheese
1 1/2 c. fresh chopped parsley
Pepper to taste
2 tsp. sugar

Saute garlic in oil. DO NOT ALLOW TO BROWN. Remove from heat. Add all other ingredients to pan. Stir, bring to a boil, turn down to a high simmer so it bubbles gently. Cook uncovered for 1 1/2 hours. Serve over wide noodles with a salad and garlic bread. Refrigerate sauce at least 24 hours before using it. Flavor will be enhanced.
