OVEN CARAMEL CORN 
1 c. butter
1/2 c. light corn syrup
1 tsp. vanilla
6-8 qts. popped corn
2 c. brown sugar
1 tsp. salt
1/2 tsp. baking soda
1 c. peanuts (optional)

Place popcorn in a large roaster to keep warm in 200 degree oven. Melt butter in large pan; add syrup and brown sugar and salt. Boil for 5 minutes without stirring. Remove from heat; stir in vanilla and soda. Beat fast and pour over popcorn, stirring to coat well. Place in 250 degree oven for 1 hour. Stir every 15 minutes. Cool and store in air-tight container.
