HOT FUDGE BANANA CAKE | |
1 c. quick rolled oats 1/2 c. butter 1 1/4 c. boiling water 3/4 c. honey 1 tsp. vanilla 3/4 c. (2 med.) bananas, washed, very ripe ones work best 1/2 c. chopped walnuts 1 c. semi-sweet chocolate chips 1 3/4 c. whole wheat flour, sifted 1 1/2 tsp. baking soda 1 rounded tsp. cinnamon 1/4 rounded tsp. nutmeg 1/2 c. flaked unsweetened coconut 2 eggs Grease and flour a 13x9 inch cake pan. In a large bowl, combine oats, butter and boiling water; let stand 20 minutes. Stir in honey, vanilla, banana, eggs; mix well. Add sifted flour and other ingredients (up to coconut). Stir until well blended. Fold in coconut, walnuts and chocolate chips and pour into prepared pan. Bake at 350 degrees F. for 35-40 minutes or until cake springs back when touched gently in the center (cake will not rise). Serve warm or cool. |
